Zucchini soup with Tarragon

Zucchini soup with tarragon

2 zucchini cut into pieces

1 minced onion

1 clove garlic

 

Steam ingredients for about 15 minutes.

 

Then add to the blender:

1 cube vegetable broth

½ bunch of fresh herbs (parsley, tarragon, basil or nothing…)

1 tbsp of cashew puree

 

Mix everything together with the juice of your juice collector (steamer). Correct the seasoning with a pinch of salt or a little broth if necessary.

You can eat it hot or put it in the fridge and eat it cold during the warm season.
